Wonderful Spinach Soup

Blended soups are always a crowd pleaser, and this spinach soup is not only good for you but it's also delicious. The sour cream at the end adds just the right amount of richness. Serve this for company, or for the family on a Friday night!

Ingredients:

3 cups chicken broth, fresh or canned

1 cup cooked fresh spinach, cooled

1 Tablespoon butter, softened

1 Tablespoon flour

1/2 tsp. salt

1/4 tsp. nutmeg

1/4 tsp. pepper

sour cream or yogurt chese for garnish

Instructions:

Put half the broth and all the spinach into a blender container, cover and process at high until smooth. Empty into a saucepan. Put remaining ingredients into container with the exception of the sour cream. Cover and process at high. Add to ingredients in saucepan. Bring to a boil, stirring constantly, then lower to a simmer for 10 minutes. Serve topped with a dollop of sour cream or yogurt cheese.
