Zingy white bean dip with roasted peppers

I got this recipe from my good pal Jennifer Hazard, who was vegetarian at one point but may have returned to the roasted flesh side at the time I'm writing this. Regardless, I was a huge fan of her many bean dips and this particular one was a real zinger!

Ingredients:

1 can white beans, drained

1 roasted pepper

olive oil

handful of fresh parsley

salt and pepper to taste

shot of hot sauce (optional)

Instructions:

My method for creating bean dips in the food processor is to put in the beans and other solid ingredients, then drizzle in the oil and spin it through until the consistency seems right. Taste it to be sure.

This is nice as a party dip, or for lunch with toasted pita wedges and a side salad.
