It's a big hit with my daughter. (My teenage son turns up his nose at the spinach and has a PB&J. His loss.) 1 pkg fresh or frozen tortellini In a large pot, combine tomatoes, broth, and garlic over medium high heat, just to a slow boil. Add Parmesan cheese to taste. Stir in cooked tortellini and spinach. Simmer for at least 15 minutes over low heat. Serve with fresh Parmesan as a garnish and buttered French bread. [The instructions above read as published years ago in the Granny's Coupons mailer. I've adapted them as required for the ingredients 'formats' I use. In a large pot, combine broth and garlic over medium high heat, bring to a slow boil. Add frozen tortellini and cook according to package directions. While pasta is cooking, defrost frozen spinach. Open can of tomatoes and drain. Drain thawed spinach. Stir in tomatoes and spinach. Add Parmesan cheese to taste (I add about 1/4 cup).
