What a great experience - it made my mouth happy. I just love Thai food! Ingredients:1/4 cup raw peanuts 1/4 cup washed scallions 1 inch piece of ginger root, peeled 1 Tablespoon onion 1 small dried Asian chili pepper or 1/8 teaspoon dried flaked chili pepper 1/4 teaspoon turmeric powder 1 1/3 cups Jasmine rice 2 1/3 cups water or chicken broth 1 Tablespoon Canola oil or peanut oil Instructions:In a small frying pan, lightly toast peanuts, shake frequently being careful as they may burn. Slice the scallion in half, bottom to top. Finely chop the cooled peanuts and place in a bowl. Finely chop the scallions and add along with the peanuts. Measure the rice and set aside. Measure the water or broth and set aside. Peel and chop the ginger. Chop the onion. Place both in a small bowl and add the turmeric and chilies all together. In a medium saucepan, heat the Canola oil on low heat. Stir the ginger, onion and turmeric-chili mixture into the heated oil. Quickly add the water or broth. Turn the heat on high. When this begins to boil, quickly stir in the rice and lower the heat to its lowest setting. Cover the pot and time for 15 minutes. Uncover and sprinkle the finely chopped peanuts and scallions over the top. Cooking time: 15 minutes Yields: approximately 4 cups rice
