Tangy Crock Pot Chicken

Some days, there's just no time to mess around in the kitchen. Ask my friend Mary, she's the busy mama of three who first served it to me. Kids or no kids... you may be swamped, but that doesn't mean you can't whip up a home-cooked meal for your honey pie. The crock pot: the most underrated kitchen tool on the planet.

1. Fill your crock pot with:

1 whole chicken, washed and rubbed with salt and cayenne pepper
1 small onion, chopped
3 cloves garlic, whole
1/2 cup soy sauce
1/2 cup rice vinegar
2 Tbsp. brown sugar

2. Cook on low for 6-8 hours or high for 2-4 hours.

Chicken is done when the timer pops and the meat is falling off the bones. Serve with fluffy white rice and a fresh green salad tossed with vinaigrette. Oh my lord, is that tasty!

Serves: 4.
