Stovetop Chicken With Root Vegetables

I titled this recipe only to realize later that someone might land here after googling recipes with Stovetop Stuffing. No, there is no stuffing of any kind, homemade or otherwise, in this dish. However, now that I think about it, stuffing can only enhance what's here. So if you have some handy, feel free to add it!

Ingredients:

2 large chicken breasts or 3 smaller ones, cubed

3 cloves garlic, chopped

Half a large onion, cubed

3 small turnips, sliced thinly

2 carrots, sliced into coins

2 ribs of celery, cut into chunks

1 parsnip, cubed

Butter and olive oil for sauteeing

Fresh herb of your choice (parsley, rosemary or dill are all good selections)

To make:

In a large skillet, sautee the garlic and onion with a pat of butter and a little olive oil. Add carrots, parsnips and turnips. Cook on medium heat, stirring occasionally, until vegetables are not quite fork-tender (about 7 minutes). Add cubes of chicken and season with salt and pepper, mixing well. Cover and cook on medium heat for about 8 minutes, then turn down the heat to low and continue to cook until chicken is no longer pink in the middle.

Sprinkle with your choice of herb, and serve with rice or the aforementioned stuffing. Makes about 4 servings.
