So fresh and so delicious - perfect for a light summer dinner, with maybe some bread and fresh mozzarella on the side. I just wonder why it was never made in my family again! This has got to change, and soon, while Jersey tomatoes are still in season. Ingredients:4 cups chopped fresh tomatoes 1/2 a red onion, chopped a large bunch of basil, chopped 1 package of spinach fettuccine olive oil grated Parmesan or Romano cheese salt and pepper to taste Instructions:In the bottom of a large pasta bowl, combine the tomatoes, onion and basil. Drizzle a generous amount of olive oil over the top and add salt and pepper, stirring everything together well. Cook the fettucine according to the instructions on the package. Drain, and quickly pour over the cold ingredients, mixing everything together well. Serve with grated cheese sprinkled over the top.
