You really don't even need the breadbowl to get a hearty thumbs-up from the Superbowl Sunday crowd. This recipe originated on the back of a box of Knorr's Vegetable Soup Mix, I believe... but many versions have surfaced, some even lowfat and lowish-salt. Use your best tastebud judgment! Ingredients:2 packages of chopped frozen spinach One large scoop of mayonnaise (consult with your Inner Mayo Meter to determine how much is right for you) Half a can of water chestnuts, diced (not too fine, we want crunch) About 3 Tablespoons of finely chopped onion 1/2 packet of Vegetable Soup Mix powder (Knorr's or Lipton work fine) Pepper to taste Large loaf of fresh bakery bread, hollowed out into a bowl shape Instructions:As I mentioned before, this is my modified version of the original Knorr's recipe. They use 1 box of spinach and I think a cup of mayo, I prefer mine lighter on the 'naise and heavier on the Popeye greenstuff. If you're watching salt, you can mix up all ingredients except the magical soup powder, then add a little at a time and taste-test as you go.
