Spicy Green Beans

My friend Kathy tells me that she prepares this green bean recipe for a large gathering, everyone loves it. Check the spice rack, hopefully you have dried chili pepper and black mustard seed among your spices. I French-cut the green beans by hand so this is therapeutic for me.

You will need:

1 1/4 lb. fresh green beans, frenched and steamed for 3 minutes

1 dried chili pepper (Asian variety)

1/2 tsp. black mustard seed

1 small onion, finely chopped

1 1/4 inch piece fresh ginger, peeled and chopped finely

2 Tablespoons canola oil

salt and pepper to taste

Procedure:

In a medium-sized skillet with a cover, heat oil to medium, add onion, ginger, mustard seed, chili pepper and stir about 2-3 minutes. When onion becomes translucent, add Frenched green beans that have been barely steamed. Stir beans into the spice and onion mixture, add salt and pepper to taste. Add about 2-3 teaspoons water, then cover pan and gently cook for about 5 minutes or until tender. Enjoy!
