Shrimp and Bok Choy Stir Fry

This is a wonderful dish for weight-watchers, or if you're trying to eat a little healthier in general. Make sure that you buy the shitake mushrooms fresh and not dried, because the fresh ones are smooth and buttery and add a distinct flavor that's really quite delicious.


1. Peel and rinse:

1 bag of shrimp

2. Chop up:

4 cloves garlic
1 large knob of ginger
5 scallions
One fistful of cilantro

3. Rinse well and slice in half longways:

5 baby bok choy

4. Coat your wok or large frying pan with:

Cooking oil and a splash of sesame oil

6. Heat on medium high and then add the ginger and garlic

7. Add the shrimp, moving the mixture around the pan frequently and adding dashes and spashes of the following seasonings:

Fish sauce
Brown sugar
Juice of one lime

8. Add the bok choy and scallions, stirring frequently. Cook until bok choy leaves are just wilted.

Serve with white or brown rice.

Serves: 2-4.
