(A lot of wine was being consumed pre-dinner by the host as well as the guests). Ingredients:4 carrots olive oil garlic oregano 4 carrots cut into 3 inch pieces and then sliced open lengthwise. In a medium size pan add enough olive oil to come to about 1/8 inch. Thinnly slice a clove or 2 of garlic (depending on your taste) Heat the pan, toss the garlic and carrots in - coat with oil and sprinkle with oregano. Turning the carrots until they start of soften (@15 - 20 minutes depending on thickness of carrots). Viola! The oregano makes it a little savory. Salt to taste (or not). A twist is to throw some snow peas into the mix. Anything with olive oil and garlic is to my liking. Serves 2. Submitted by Mary Durante Wehrhahn
