What a delicious meal... the perfect thing to fill your belly on a cold and rainy afternoon.
6 large country-style sausage links 2. When they're thoroughly cooked, remove from the pot and drain on paper towels. 3. Fill a large soup pot with: 4 or 5 small potatoes, chopped into bite-sized pieces 4. Bring the vegetables to a boil and then lower the heat to medium. Cook until the potatoes are tender. 5. Drain that "foamy stuff" off the top of the broth (that's potato starch). Add sausage links and simmer a bit until everything is heated through. 6. If you enjoy herbs, you can toss in at the end: A handful of fresh, chopped parsley This soup is made with sausage, but because the sausage is boiled and it's cooked with low-fat chicken broth, it's quite light and easy going down. Serves: 4.
