Salmon with Cold Tomato Salsa

Here's a dynamite salmon recipe that's sure to titillate your tastebuds. The hardest part is the salsa... which isn't very hard at all! The rest? Just cook a nice thick salmon steak to your liking. Dinner is served.


1. Dice up the following and combine in a large bowl:

Two large (or 4 small) vine-ripened tomatoes (you can substitute a large can and a half of whole tomatoes if you can't find any good fresh ones)
Half a large onion (root removed)
Half a green pepper

2. Then chop up and add:

A small fistful of fresh cilantro

3. Mix all ingredients and season with:

The juice of half a lime
A pinch of salt
A pinch of pepper
A dash of hot sauce (you can substitute red pepper flakes if you're out of hot sauce)

4. Cover the salsa and chill in the fridge while you prepare:

2 salmon steaks

5. To bake salmon:

Preheat oven to 350 degrees. Place salmon steaks skin-side-down in a shallow pan. Cook for about 7-10 minutes per inch of thickness.

Serves: 4.
