Ricotta Peach Salad

Ingredients:

4 large peach halves...very ripe ( can use canned peaches )

1/2 cup ricotta cheese

1/4 cup chopped pecans

2 tablespoons honey

2 teaspoon finely chopped fresh mint

Lettuce or spinach leaves

whole pecans

Extra mint leaves

Instructions:

Combine cheese, chopped pecans, honey and chopped mint in a small bowl.

Spoon cheese mixture onto peach halves.

Place filled peach halves on lettuce leaves, garnish with whole pecans and mint leaves.

Serves 4
