Marinated Mushrooms

Ingredients:

3 Tablespoons fresh lemon juice

1/2 tsp salt

1/8 tsp pepper

1/2 cup olive oil

1/2 lb. small fresh mushrooms

garlic clove

Instructions:

Slice off the tip of each mushroom's stem, then wash all mushrooms in a bowl of water and drain. Lightly smash the garlic clove and spear with a toothpick. Combine lemon juice, parsley, salt and pepper and then whisk in olive oil in a slow stream. Add the garlic clove. Add in the mushrooms, cover, and let marinate in the refrigerator overnight.
