Marinade for Chicken, Steak and Lamb

Laura DiGangi has kindly donated an entire series of family recipes from her Italian husband's side of the family... taken from the DiGangi Family Cookbook! This is a delicious, garlicky dressing that her husband Tom's mother uses to season various types of meats - "Grandmom Abruzzo's special marinade."

Ingredients:

2 cloves of garlic

2-3 T. extra virgin olive oil

Juice of 1 lemon

Oregano, dried

Parsley, fresh

Dash of red hot pepper flakes

Salt and pepper

Instructions:

Peel garlic, chip into smaller pieces and place in a soup bowl or equivalent. Add oregano, hot pepper flakes, salt and pepper to the bowl.

With fork, crush the garlic combining the oregano, salt and pepper mixture. Add olive oil, juice of one lemon and chopped up parsley to the mixture and blend together.

Voila! You have a delicious marinade to be used on cooked meats as is. Or you can baste your meats with the marinade while cooking.
