These Italian recipes were especially requested. I would like everyone to prepare and enjoy them! Ingredients:1 large onion, chopped 1 garlic clove, chopped 2 links sweet Italian sausage with fennel seeds (go for good quality sausage) 2 Tablespoons olive oil or lard 2 bay leaves 2 tablespoons fresh basil, chopped 3 or 4 large cans of store brand tomato sauce (this is no joke) black pepper, salt to taste Instructions:In a large saucepan, drizzle a very tiny amount of olive oil (so the sausage does not stick). Turn to medium heat and add sausage. Pierce the sausage with a fork. Brown sausage on all sides (leave the pan brownings - they'll be used to flavor the onions). When sausages are brown, move them to the side and add olive oil to the sauce pot. Stir in the garlic and onions, then the tomato sauce. Slosh a little water into the cans to remove every bit of sauce and pour into the pot. Add the bay leaves and the basil, pepper and salt. Turn heat to medium, when sauce bubbles lower the heat to medium-low and simmer with the cover off for 2 hours minimum, 2 1/2 hours maximum. Stir occasionally and add a small amount of water if the sauce becomes too thick. Serve over your favorite pasta, cooked al dente of course. Unused sauce can be frozen!
