D's Favorite Lean Lamb Patties

Ingredients:

18 oz. lean ground lamb (makes 3 patties)
3 small cloves garlic, sliced
6 Tablespoons tomato sauce
pepper and salt to taste
sprinkle of dry oregano or 1 Tablespoon chopped fresh parsley
1/4 cup water (approx.)

To make:

Season the ground lamb meat with salt and pepper, then shape into plump patties, about an inch thick. Place in small roasting pan. Spread tomato sauce over the top of each patty, and dot with garlic – 1 clove for each. Sprinkle with oregano.

Preheat the oven to 350 degrees. Roast patties about 25-30 minutes total, removing from oven halfway through, adding water and stirring up the brown bits from the bottom to baste. Great with a side of rice!
