They were made special for me and served with our Sunday dinner. Better yet -- when I unwrapped my waxed paper covered sandwich at the school lunch table to find my raost beef on Wonder bread was topped with these peppers, my simple sandwich had become a special treat! Ingredients:3 green bell peppers, cut into strips 2 small garlic cloves, sliced 1 1/2 Tablespoons olive oil 2 small Roma tomatoes, cut into pieces or 5 Tablespoons canned tomato sauce salt and pepper to taste Instructions:In a medium saucepan with a cover, heat olive oil to medium high heat. Add pepper strips, sautee and stir for about 7 minutes. Sprinkle with salt and pepper and sautee for 4 minutes more. Add the garlic for 1 minute (do not let garlic brown). Stir. Quickly stir in Roma tomatoes (or canned sauce if that's what you're using). If you use the whole tomatoes, press with the back of a wooden spoon into brownings on bottom of the pan. Cover and simmer for about 7 minutes. If the sauce becomes too dry, stir in a little water, about 2 tablespoons at a time. Don't forget the crusty Italian bread! Serves: 4
