Italian Meatballs

Traditionally, these are fried for the best taste – but you can also bake them in the oven with a thin brushing of oil on the pan. Tsk, tsk. What would grandma say?

Ingredients:

1 lb. 85% lean ground beef
2 slices day-old white bread with crusts removed
1 egg
1 clove garlic, pressed
1/4 cup grated Parmesan cheese
1/8 teaspoon black pepper
1 or 2 Tablespoons fresh parsley, finely chopped
Optional pignoli nuts and raisins
Canola oil for frying
Flour to coat meatballs

Break up bread and put it in a mixing bowl with a small amount of milk or water. Add ground beef, egg, pressed garlic, grated cheese, pepper and parsley. With clean hands, mix well and then form meatballs.

Baking:

If you intend to bake the meatballs, preheat the oven to 350 degrees and place the meatballs on a shallow baking pan. Bake for about 25 minutes, turning once during baking. Add the cooked meatballs to the sauce you are preparing and allow them to cook in the sauce for about 10 minutes.

Frying:

If you prefer to fry the meatballs, use a shallow frying pan. Turn the meatballs in flour and then place on a flat plate. Heat about 1 inches of canola oil to 350 degrees. Fry meatballs, turning frequently. Drain on paper towels and then add to sauce.
