The tomato makes it oh-so-most, and the cheese calls out for a side of pasta. When I make it, I actually have trouble perfecting the balance of meat, tomato and bread. Hers comes out perfect every time, but I'm still working on copying her technique. Play around with the recipe and see what type of delicious results you get! Ingredients: 2 + Lbs ground beef (85% lean) 2 eggs 1 cup diced tomatoes or tomato sauce 4 slices whole wheat bread, toasted and soaked in water Seasoned bread crumbs as needed to obtain texture 1/2 cup chopped onion Red, orange, yellow or green peppers 1 small can of mushrooms Grated cheese - 1/8 cup? Italian spices - garlic, parsley, oregano , salt and pepper To make: Combine all ingredients. Pat into a loaf pan. Bake at 350 degrees for 1 hour 15 minutes. Submitted by Cathy Hyde
