Homemade Tomato Soup

Have you ever wanted to try your hand at preparing tomato soup like the kind that comes in the Cambell's can? Me, I like to do things the hard (read: FUN) way, so one day I plan to make tomato soup from scratch. Luckily, my mom came through with a recipe to try. Sounds like the perfect match for a delicious, pan-grilled cheese and tomato on rye.

Ingredients:

1 quart fresh tomatoes* or one 2 1/2 lb. can of tomatoes and juice

1 slice onion

2 cups water

2 tsp. sugar or 1 teaspoon honey

1 1/2 tsp. salt

2 Tablespoons soft butter

2 Tablespoons flour

Instructions:

*If using fresh tomatoes, prepare in advance by blanching them to remove skins. To do this, plunge in boiling water for 2 minutes, cool and peel. The skin will come off easily. Also remove seeds.

Put tomatoes into a blender container, cover and process at low until tomatoes are liquified. Pour into a saucepan. Add remaining ingredients to blender container, cover, and process at low until smooth. Add to tomatoes in saucepan. Simmer about 20 minutes.

Add an optional 1/2 cup cooked rice to soup.
