Hearty white beans over homemade bread

Would you believe my grandma was a vegetarian - before most people heard of it! That's why there is no bacon in this bean recipe. The homemade bread was hard red wheat that she ground into flour herself - or maybe Grandpa did that. Serve with fresh cucumbers and vine ripe tomotoes (on the side) from the garden. Then for dessert you cracked a few almonds or walnuts from the shell. Of course after that we played games (long, long ago! :)

This is the ultimate comfort food. The recipe is really so simple, but turns out so ummy. Below is how my grandma did it, but I encourage you to try it once and refine the recipe how you like. Nowadays, people probably would add a little white pepper (not black), clove of minced garlic, and finely diced white onions.

Ingredients:

One bag of white beans

Water

Homemade wheat bread

Butter

Salt and pepper to taste

Instructions:

Soak beans 1 hour in cold water, then pour water off. Add beans to pot, pour in water and bring to a boil. Then... let sit two hours. Finally, cook beans until tender probably another 2 to 3 hours. Drain any excess water. Add salt, several big pats of butter to taste. Beans should be thick. Ladel over fresh homemade wheat bread - and devour.

Serves: a crowd.
