Try it with lamb or beef, a leafy green, and a side of cucumber and tomato salad. Ingredients:2 Tablespoons oil or butter 1 cup brown rice 2 1/2 cups water 1 small green bell pepper, chopped 1/2 cup chopped sweet onion 1 to 2 stalks celery, cut in half lengthwise, then into small dice pinch of celery seed 1/2 tsp. turmeric powder 1/2 teaspoon salt 1/8 teaspoon black pepper Instructions:Wash and drain brown rice prior to beginning the recipe. In a medium saucepan, add oil or butter, heat to medium and add onion, pepper, celery and sautee until onion is translucent, about 10 minutes. Quickly stir in turmeric, celery seed, salt and pepper. Add water and stir to mix onion mixture into water. Turn to high and bring to a boil. Stir in rice, then turn heat to lowest possible setting. Cover tightly and allow to simmer gently for 45 minutes.
