Grammie's Fried Rice

This is a quick and easy dish with most ingredients being a staple in the house. I also have a very fond memory of this dish as we used to have it a lot when family got together because it feeds a lot, and my uncle is Chinese. 

Ingredients:

- 3 Tbsp oil, divided

- 4 eggs, slightly beaten w/fork

- 3/4 cup frozen peas (thawed)

- 1 cup chopped cooked ham

- 4 cups cooked rice

- 1 1/2 tsp salt

- 1/4 tsp garlic powder

- dash pepper

- 2 Tbsp soy sauce

Directions:

 .  In a large skillet heat 2 Tbsp of oil

 .  Add eggs, cook and stir until set

 .  Remove eggs from skillet and set aside

 .  Adding remaining tsp of oil to skillet w/ham, cook 2 minutes

 .  Stir in remaining ingredients

 .  Heat thoroughly 

Serve hot.

(Makes 6 servings, 310 calories/serving)
