I've always adored frozen bananas. I remember we'd freeze them as kids - just peeled and wrapped, no actual toppings -- and then enjoy a sweet, cold and fruity treat. It was as close to ice cream as one could get without actually being ice cream.

Tonight I noticed we had an abundance of bananas that were starting to get past the "just ripened" stage that I enjoy so much. So I decided to turn them into banana-sicles and this is how I did it:

Ingredients:

3 whole bananas

half a cup of walnuts, chopped

jar of fudge, Smuckers or Hershey's is good but I'm sure others work just as well

Tools:

Waxed paper

Cutting board

Chef's knife

Saucepan

Spoon

Chopsticks

Instructions:

Start by warming the fudge. Place the glass jar directly into a saucepan full of water and heat to boiling, stirring occasionally. (The water should be boiling, not the fudge). Lay out two sheets of the waxed paper. Separate the chopsticks and insert one into each banana, longways. You can also slice the bananas in half and put half a banana per chopstick.

While the fudge is heating, chop the nuts on the cutting board and set aside. Remove the fudge from the heat and lay one of the bananas on a sheet of waxed paper. Drizzle the warmed fudge over the top of the banana. Sprinkle the chopped walnuts over the fudge-coated surface. Turn the banana over and repeat for the other side.

Move the banana to the second sheet of waxed paper and gently wrap the waxed paper around the banana. Place in the freezer. Lay out another sheet of waxed paper in place of the one that you used to store the frozen banana.

Repeat the process for all of the bananas. Freeze until hard - maybe 2 hours?
