Also, be sure to use a glass measuring cup for the liquid ingredients, and a dry measuring cup for the flour. Ingredients:1 cup unsifted, unbleached flour 2 eggs, unbeaten milk Instructions:Loosely spoon unsifted flour into a 1 cup measure. Level off and put the flour into the glass liquid measuring cup. Add the 2 eggs, then add milk until you have 2 full cups. Wipe the frying pan with the paper towel wad of light (Canola) oil. Heat the pan until water droplets sizzle when they hit the surface. Hold the pan in one hand and quickly pour 1/4 cup of batter into the pan. The batter will quickly take over the entire surface of the pan. Remove the pan from the heat, flip your "crepe" once and then quickly pick up with a fork. Wipe pan with your oiled paper towel and proceed with the next manicotti shell. Do this until you've used all the batter. Makes approximately eight 6.5 inch manicotti. Proceed to next recipe, Cheese Filled Manicotti. Custom Search
