When we were young I watched carefully as Dad's mom prepared this in an electric buffet server. So they say, the way to a man's heart is through the stomach. Chicken prepared in this way is the ultimate Sunday fare for any dad! Ingredients:One 2 1/2 to 3 lb. frying chicken, cut into small pieces 1 Tablespoon fresh rosemary leaves, chopped 2 cloves garlic, sliced 2/3 Tablespoon olive oil 1/3 cup white wine 1/3 cup chicken broth or water 2 3-inch strips of lemon rind (2 pieces) Juice of half a lemon salt and black pepper to taste water if necessary Instructions:A few comments on cutting up the chicken: Rinse and pat chicken dry before starting. Do not include back or wing tips. Cut breast into 2 or 3. Cut leg from thigh. In a large, heavy-bottomed skillet with a lid, heat olive oil and add chicken pieces, salt and pepper and brown carefully on both sides. Quickly stir in the garlic (do not brown), then add white wine to the pan , stirring together with brownings. Add lemon peel, rosemary, stir a bit more, then add broth and cover tightly. Lower heat and cook slowly for 30 minutes or longer until chicken is tender. If the pan becomes dry, you can add 1/3 cup more of water. Just before serving, stir in lemon juice. Serves: 4
