Crab Burritos

Try this lighter alternative to regular burritos with a side of black beans and rice. A great dinner for a rainy summer night at home with just the two of you. Making them is every bit as fun as eating. Enjoy.

1. Sautee in a large frying pan on low heat:

olive oil or butter
2 cans of pasteurized crab meat
Half a large onion (or one small onion)

2. Season with:

Juice of half a lime
Sprinkle of cajun seasoning


3. Arrange in little serving bowls:

Half a green pepper, diced
One tomato, diced
Half a can of olives, sliced
1 bag Monterey Jack cheese
1 avocado, sliced or mashed
Sour cream
Hot sauce

4. Warm in the oven:

Four burrito shells.

Do what I call the tuck-and-roll to form your burritos. Lay your burrito out flat. Spread a strip of meat filling and then add small amounts of whatever you like. Avoid overstuffing if you can! Fold the part that's closest to your body up and over the filling. Then tuck in the left and right sides. Finally, roll the fajita shell away from you. Grab a couple of big plates and a stack of napkins, load up on burrito filling, and then go to town! What a fun dinner.

Serves: 4-6.
