Cherry Bread Pudding

If you have some bread that's getting old, here's a good way to use it. Although this is a dessert, you may want to include it on the brunch menu - seems okay to me: fruit, eggs, bread, milk!

Ingredients:

10 slices white bread with crusts still on

1/4 cups butter or butter and canola oil combined

4 eggs

5 cups of milk, scalded

1/2 cup sugar

1/2 teaspoon salt

1/2 teaspoon vanilla

1/2 pound Bing cherries, stems and pits removed

Instructions:

Spread butter onto bread slices and then cut them into 1/2 inch wide strips. Beat eggs, then temper into slightly cooled scalded milk. Add sugar, salt and vanilla. Mix in bread. Butter a 10 inch Pyrex pie dish. Scatter cherries into the bread custard mixture. Set the Pyrex pie dish into a pan of hot water and bake in a 350 degree oven for about 45 minutes or until knife inserted into center comes out clean.
