This is an extremely rich and delicious dish which can be served as a main course as it is very delicately flavored yet filling. Note: I do not put any mozzarella into my manicotti filling mixture, although others may. Ingredients:1 1/2 lbs. ricotta 2 large eggs 1/4 cup chopped fresh Italian parsley (the flat-leafed kind) 1/3 to 1/2 cup grated Parmesan or Romano cheese 1/2 tsp. white pepper (black is okay if you don't have it!) Instructions:Mix together ricotta, eggs, parmesan, parsley and pepper until well blended. This is your manicotti filling.
Next, assemble manicotti. Spoon a thin later of tomato sauce into a long, rectangular baking pan. Spoon the ricotta filling down the middle of each manicotti crepe and gently fold both sides over to close. Place the filled manicotti side by side on top of the layer of sauce. Spoon sauce over all of the filled manicotti. If you like, sprinkle grated Parmesan cheese over all (I prefer to put my grated cheese on the side). Bake at 400 degrees for 10 to 15 minutes.
Serve with grated cheese on the side.
Serves: 4 people, 2 manicotti each.
