Cathy's Creamy Rice Pudding

Ingredients:

1 1/2 cups Carolina Rice
10 cups milk (2 cans evaporated milk + whole milk to equal 10 cups)
1 cup sugar
1 egg
1 tablespoon vanilla extract
milk
11/4 cup raisins (optional)
1 small container Cool Whip (optional)
1/2 teaspoon cinnamon

Instructions:

Bring rice, milk and sugar to a boil. Lower heat and cook uncovered, stirring often, approximately 60 minutes.

While that's cooking, cover raisins with boiling water and soak approximately 15 minutes. Drain dry raisins on paper towel and set aside.

In a measuring cup beat egg, add vanilla extract and add milk to equal 1 cup.

During the last 3 minutes, slowly add egg, vanilla and milk mixture to rice; then stir rapidly for 3 minutes. Stir in cinnamon and raisins.

Pour into Pyrex bowl and when cool, fold in Cool Whip.
