There are also limitless variations on mashed potatoes - they dress up or dress down with ease. This is the basic recipe. Ingredients:6 Yukon Gold potatoes Water Milk Butter Salt Pepper Instructions:Wash dirt off potatoes and peel away the skin. Cut in half longways and then slice. In a medium sized saucepan, add sliced potatoes and then fill with water, leaving 3 inches from the rim. Cover pot and heat on medium-high. When water boils, set the timer for about 10 minutes. Check periodically to make sure potato water doesn't bubble over the sides; if it does, lower heat or drain some water out of the pot. After the ten minutes is up, carefully remove one potato and test done-ness with a fork. If potatoes are still tough, boil for five minutes more at a time, doing the fork test each time. When potatoes are completely soft, drain in a colander and then place back in the pot you cooked them in. Use a potato masher to smash them up. Add about 2 tablespoons of butter (a large pat) and stir in quickly so butter melts. Pour in a generous glug of milk. Season with a pinch of salt and a pinch of pepper. If you like your mashed potatoes light and fluffy, take out a hand beater and whip some air into them using that. If you don't have a hand beater, you can vigorously beat them with a whisk or wooden spoon. Taste your mashed potatoes to make sure the desired amount of creaminess, saltiness and spiciness is apparent. If not, add more butter, salt and pepper. Success! Serves: 4-6
