Balsamic Chicken

Pure virgin olive oil and sweet, pungent balsamic vinegar that's aged to perfection... what a divine coupling! It goes as perfectly in a salad as it does in this fantastic, Italian-style chicken sautee. This dish is quick and simple to prepare, and will make you feel like you're dining at an expensive restaurant.


1. Chop up and sautee on very low heat in olive oil:

2 cloves garlic
1 onion
1 green pepper
1 can whole tomatoes, seeded and drained

2. Add to the pan:

1 package of chicken breasts, cut in large chunks
1 cup balsamic vinegar
salt and pepper to taste

3. Cook, covered, on low, for 15-20 minutes or until chicken is no longer pink in the middle. Serve over pasta.

Why not go for a variation on a theme? Experiment with herbs for something different every times. Try it with oregano, parsley, thyme, or basil. Magnifico!

Serves: 2-4.
