Baked Apples

Baked apples are an easy dessert to serve on a chilly autumn evening. If you're already making something in the oven, like baked chicken or a casserole, why not? Also, if you're watching your sugar you can leave the sweetener out and they'll still be pretty delicious.

Ingredients:

1/2 cup raisins

2 Tablespoons chopped walnuts or pecans

2 teaspoons lemon juice

1/2 teaspoon cinnamon

2 Tablespoons butter, melted

6 firm baking apples

2 Tablespoons finely chopped dates

1/8 cup brown sugar or honey

Instructions:

In a small bowl, mix together raisins, nuts, brown sugar or honey, lemon juice, dates and cinnamon.

Wash and core apples and peel about 1/3 of the skin to prevent them from splitting while baking. Evenly distribute the raisin/nut mixture into the center of each apple. Place apples into a baking pan. Add a little water. Bake at 350 degrees for about 45 minutes. Be sure to spoon water from the pan over apples as they bake. May be served with a favorite whipped topping - whipped cream is my choice!
