Antipasto

An antipasto is a light start to a meal, that is if your idea of "light" is cured meats and cheeses with pickled vegetables. ;) Truth be told, there are no set rules as to what you may serve. You might try an assortment of deli meats, marinated vegetables, salads and fresh fruits, all of which are to be artfully arranged. Here is my version - I like to set mine on a large, festive platter.

Ingredients:

romaine lettuce

large tomato, sliced

salami, thinly sliced

soprasata, thinly sliced

smoked mozzarella, sliced

red roasted pepper, cut into strips

marinated mushrooms

black or green olives

Instructions:

Each person is served a "stack" that includes one crisp romaine lettuce leaf, followed by the remaining listed ingredients. Spinkle fresh thyme and pour a bit of olive oil over the top of each stack for a festive presentation. Enjoy!
